Cafe Rio Sweet Pork

Now, nothing can quite be like the original, but this comes pretty close...

3 - lbs pork loin
1- 7oz can chilis in Adobo Sauce (you have to get the adobo sauce ones because you only want the sauce, not the chilis- sometimes you might only find the 12 oz cans)
1 1/2 cans coke (the real stuff- no knock offs or diet)
1 cup sugar
1 heaping teaspoon each ground mustard and ground cumin
1 tsp minced garlic

Put everything in a blender (except for the pork of course). Pick the chilis out of the can of adobo sauce because they will make it way too spicy. Make sure to get as much of the sauce as you can. Whip it up for a minute or two, them pour it over the pork in a crock pot. Cook on low for 7-9 hours. Pull it apart with a fork. We put it over chips with pinto beans, cheese, guacamole, salsa, and sour cream for some fabulous nachos. You can also make burritos or salads. Yummm!

Grandma’s old fashioned baked beans

(For any of you who have suffered through a BBQ at my house, this is the recipe for the beans we serve)
1 large (family size) can bush’s original baked beans
1/3 cup chopped onion or 4 Tbsp dried onion.
½ cup firmly packed brown sugar
¼ cup catsup and mustard mixed.
Mix first three ingredients in a glass or oven safe dish. Add catsup and mustard on the top. Mix together, and bake at 350 for 45 minutes. When hot and bubbly, remove and serve.
You can take the time to make the beans from scratch like my grandma always did, but any can of premade baked beans works just as well and saves you some time. You can also just microwave this dish, but it won’t thicken up like it does in the oven. another way is to do this in a crockpot or slow cooker. It will thicken up nicely as it cooks.

Tuscan Style Chicken Sandwiches

1-1/4lbs boneless skinless chicken breasts
2 garlic cloves minced
1/2 cup roasted red bell peppers (from a jar)
1/2 tsp salt
1/4 cup mayo
3 Tbsp pesto sauce
1 (10 inch) focaccio bread
6 slices tomato
6 slices mozzarella cheese

Place chicken in crockpot. Sprinkle with garlic, roasted pepper strips, and salt. Cook on low 6-7 hrs. Just before serving, remove chicken and peppers and shred with forks on large plate. In a small bowl, combine mayo and pesto; blend well. Cut focaccio bread into 6 wedges, splitting each in half. Spread cut sides with mayo mixture. Place about 1/3 cup chicken mixture on half of wedge. Top with cheese, tomato and top of bread.

Chicken Burritos

1 can corn
2-4 chicken breasts
1 can kidney beans
2 tsp chili powder
1 can black beans
1 tsp garlic salt
1 can diced tomatoes

Place chicken breast in crock pit (they can be frozen). Drain all cans but tomatoes and add to crock pot with spices. Crock pot on low for 8 hrs or high for 4 until chicken falls apart and shreds. Serve in tortillas with cheese and sour cream.

The best Baked Beans you'll ever eat

1 lb ground beef
6 strips of Bacon, cooked and broken up
1 Large + 1 small can pork n' beans
1 can drained butter beans
1 drained can kidney beans
1 c. Catsup
1/2 c. Brown sugar
1/2 c. White sugar
1 TBSP liquid smoke (find it by the tobasco sauce)

Put it all in a crockpot for 4-6 hrs on low

Creamy Chicken Italiano

1/4 Cup water
1 pkg dry Italian Seasoning (It will be by the dry packets of ranch)
1-8 oz pkg cream cheese
1 can cream of chicken soup
4 boneless chicken breasts, cubed

Put the chicken in Crockpot. Mix together dressing and water and pour it over the chicken. Cook on low for 2-3 hours. Mix soup and cream cheese together and pour over chicken. Cook another 1-2 hours or until its all nice and creamy. Serve it over rice, noodles, rolls, or any other high carb item. Yum!
